How do you prepare your story arch before you write?

Do you just pen out bullet points of each scene you’d like to hit? Do you start by outlining things by acts, then scenes, and keep getting more and more specific until you reach the individual paragraphs? Do you just dive in and try to let the story progress as you write? Do particular methods work best for particular styles or genres of writing? Anything off the wall I wouldn’t expect?
