How do you go about writing about something that you know nothing about? writing

How do you go about writing about something that you know nothing about?

I'm currently writing a story about some western-esque wasteland justice and my character is finally getting his own horse. How do I write about horseback riding without seeming like I'm entirely ignorant on the subject and without looking like everything I know was derived from wikipedia?
